Vanilla pudding with fruit compot
Vanilla pudding with fruit compote Ingredients: serves 4 200ml milk ½ vanilla pod, split lengthways 2 egg yolks 50g sugar 15g flour 2 tbls cream Fruit compote- can be made by stewing any fresh or frozen fruit
Bring the milk and the vanilla pod slowly to the boil. Whisk the egg yolks and sugar together and add the flour while whisking. Slowly pour the milk into the egg mixture while whisking constantly, then pour the mixture back into the saucepan and bring to the boil. Stir constantly while cooking for 3 minutes. Stir in the cream. Strain the mix, refrigerate and serve in glass bowls with the fruit compote.
